Having undergone a single pasteurization, it retains much of the vibrant freshness of a Namazake while gaining stability and a smoother, more mellow character. Expect a nuanced aromatic profile of ripe stone fruit, balanced umami, and a hint of subtle spice, leading to a palate that is medium to full-bodied, textural, and wonderfully integrated, with a long, elegant finish.
