Produced by the cult natural winery Funky Chateau in Nagano Prefecture, this 2020 Cabernet Sauvignon is a rare and expressive Japanese red. Grown in the volcanic soils of Aoki Village without chemical pesticides, it is fermented with wild yeasts and bottled unfiltered. The wine offers a distinctively pure nose of blackcurrant (cassis), violet, and characteristic herbaceous notes of green pepper and forest floor. On the palate, it is medium-bodied with vibrant acidity and fine, dusty tannins, showcasing the elegant side of the varietal.
